Texas Sticky Pork
Originally this was called Vietnamese Caramelized Pork, but when wrapped in a warm tortilla it becomes a Texas dish.
INGREDIENTS/DIRECTIONS
Place the following in a cast iron skillet and cook on high heat until the meat is browned on all sides
2 lbs pork butt or boneless ribs, cubed
1/2 onion, chopped
1 T olive oil
Reduce heat and add
2 T fish sauce
1 T soy sauce
3 T brown sugar
1 cup water
Bring to a low boil and cook until meat is tender and liquid is reduced to a glaze that coats the meat—about one hour.
Serve in warm tortillas or over white rice.
